The management of vineyards requires special attention as the origin of good wine quality lies in the vineyards.
In harmony with nature, the company practices integrated viticulture. In order to counteract the undesirable side effects of a monoculture, we sow our vineyards with special seeds and organically fertilize them through the introduction of controlled compost.
We operate a balanced yield regulation which starts with the first cut of the vines and the vintage dependent green harvesting or grape division which is required after the flowering. The high-quality varieties of grapes are harvested solely by hand as only high-quality grapes serve as a basis for good wines. Only healthy and ripe grapes can be processed into elegant wines with great, aromatic complexity.
The Wine Cellar
After the harvest, special care is provided through a gentle and quality preserving processing. Attrition, as well as the oxidation of the harvested grapes, is avoided during the remaining working processes.
Due to latest technology, the fermentation of the grape must takes place in thermo-regulated, stainless steel wine casks. As we work with small containers, every batch can be individually accompanied during the fermentation process and the wine’s aromatic complexity can be increased.
The red wines mature for at least 10 months in the so-called “Barriques” (oak barrels) before they are bottled.
We are keen to produce wines with a lot of freshness und aromatic complexity. But what is especially important is that the wines are balanced and have a harmonious taste. The connoisseur has to recognise the terroir (minerals) and at the same time, he should grasp the grape variety’s typical aroma (fruit).
