Chicken Fricassee with Riesling wine

Ingredients for 10 serves:

  • 3pc chicken (each 1,2 kg)
  • 1000ml white stock
  • 300ml Luxembourgish Riesling wine
  • 150g butter
  • 500g mushrooms
  • 150g onions
  • 100g flour
  • 250ml crème fraiche
  • q.s. thyme, bay leaves, parsley
  • q.s. salt, ground pepper


  • cut the chicken
  • season
  • stiffen the chicken pieces in butter
  • add and sauté the chopped onions
  • sprinkle with flour
  • deglaze with white wine
  • add white stock and cream
  • add the garnished bouquet
  • cook for 30 minutes
  • remove chicken breasts after 30 minutes
  • continue the cooking process and remove the legs after 15 minutes
  • reduce sauce
  • check seasoning
