Pickled Herrings

Serves 10

Ingredients

  • 10 pc herrings
  • 500 ml crème fraiche
  • 200 ml vinegar
  • q.s. ground pepper
  • 4 pc juniper berries
  • 2 pc bay leaves
  • 20 ml lemon juice
  • 200 g apples
  • 200 g onions
  • 80 g tomatoes
  • q.s. walnuts
  • q.s. chervil / parsley

Directions

  • cut off heads
  • remove skin and fins
  • empty the fish
  • keep the roes
  • leave to sweat for 2 days
  • drain
  • pass the roes through a sieve with vinegar
  • add crème fraiche, grated apple, lemon juice, spices and onion rings
  • put herrings in the marinade
  • marinate for at least 2 days before serving
  • arrange in pots
  • sprinkle with chopped parsley
