Luxembourgish Esaü Soup

Description

Serves 10

Ingredients

  • 200 g lentils
  • 150 g onions
  • 150 g celery
  • 150 g carrots
  • 150 g leek (only white parts)
  • 150 g smoked bacon
  • 50 g butter
  • 3000 ml  water / white stock
  • q.s. bay leaves, clove
  • q.s. salt, ground pepper

 

Directions

  • peel and wash vegetables
  • thinly slice onions, celery, carrots and white parts of the leek
  • cut bacon into pieces
  • sauté smoked bacon, onions and leek in butter
  • add lentils
  • season with salt and pepper
  • add bay leaves and cloves
  • add water / white stock
  • cook for approximately 50 minutes
  • remove bacon and dice it
  • move bacon back into the soup
  • check seasoning
